Start with a blanquette of frogs legs with basil served on a flaky mushroom and chorizo galette, followed by bass in a seaweed and dashi broth with three-cornered brown shrimp and preserved rhubarb ravioli if you are a fan of fish. Alternatively, there is the warm duck foie gras soup with Belon oyster, and the Mont Royal pigeon served with fennel, purple artichokes and black garlic, a parsley crumb and Kalamata olive jus.

If you have a sweet tooth, the desserts make the aromas sing: a chocolate disc with Gers walnuts on a dacquoise with cocoa sorbet and walnut oil snow, a croustade filled with apples flambeed in Armagnac and a Baked Alaska with orange liqueur, or a fresh peach poached in red wine with tarragon sorbet will make your mouth water: prepare for pleasure that you will not be able to resist.
