Formerly the top apprentice butcher in Brittany, Andriy Maximov is not just any meat merchant. Having worked at Hugo Desnoyer, Yves-Marie Le Bourdonnec and Dickson's Farmstand Meats in New York, he has imported Dickson's brick walls and deli ambience to MeatCouture, a very exclusive butcher shop that features a handpicked selection of fine cuts.

Meat hanging in cold lockers is cut to order at the central butcher's block. At lunchtime, it serves as a lunch counter. Or one can pull up a stool and eat while gazing through the wall-sized front window at the Recouvrance Bridge. The menu features delicious corned beef, ravioli stuffed with lamb from Lozère, a leg of lamb in homemade basil pesto and marinated peppers, sirloin steak with rosemary, shoulder of lamb in snail butter and Elena Burgers – named after Andriy's wife. Also, try the mouth-watering T-Bone steak and ham hock, aged by the master and cooked to order. MeatCouture also serves breakfasts and, twice a month, gourmet dinners.
