At the foot of the Croix Rousse, Isabelle and Laura have reconnected with the tradition of the Lyonnais mothers in a 'bouchon' installed in a 13th-century house. Though the setting is rustic, and pink is on every chequered tablecloth, the kitchen contains all the codes of the 'bouchon' in a light version and in a more contemporary spirit.
On the appetiser side, as was traditional in these worker bistros, bowls of appetizers and terrines pass from table to table, while on the menu, the crispy black pudding with apple comes with pot-au-feu, herrings are served in creamy mousseline form, while the famous perch pike dumpling is splashed with Nantua sauce.
For dessert, you will surrender before the iced soufflé with green Chartreuse, or the praline pie, a Lyon pastry that no one can resist.
