Chef Christian Etchebest's Bearnese soul delights taste buds in his third restaurant.

With its tables and wooden chairs, metro-tiled bar, rugby shirts, photos of the French rugby team, red and black tiled floor, and slate wall, the decor is like the food served here: authentic. The signature dishes on which the reputations of Chef Etchebest's restaurants in Paris's Pernety and Dupleix neighbourhoods are all here and are sure to win over diners in the new place, too. Razor clams à la plancha, black pudding parmentier and traditional jugged hare are familiar fare, masterfully prepared by Christian Etchebest and Nicolas Gras, the pastry chef with three Michelin stars to his name. The two have collaborated to devise a delicious menu from the starters to the desserts. Besides the classics, there are also the grilled pigs ears with pesto and piment d'Espelette. You will not be disappointed.
