Michelin-starred chef Lionel Levy, a very bright light on the Marseille haute-cuisine circuit, serves his subtle cuisine on the first floor of the gorgeous InterContinental Hotel, in a dark, wood-lined dining room with a breath-taking view of the city. The menu is extremely innovative. Mr Levy likes to surprise. He mixes the most amazing combinations of flavours, for example, oysters and pork served with creamy bearnaise sauce and black truffle marrow crostini, or braised duckling legs in sea salt with sweet and sour fennel. For dessert, he imagined a dark chocolate souffle with Hibiki 17-year-old whiskey for you.
For the chef, the key to being a gastronomic star is paying meticulous attention to detail, choosing the best products, being creative, and having fun. He provides no shortage of the latter, mixing flavours of land and sea, reinventing traditional recipes, and amazing us with both his plating and garnishing ideas, and the fresh teas and infusions that he serves as afters, accompanied by tasty and very colourful sweets.
